Gabe has remained pretty vague in his answers, but basically in terms of what HL1 can do alone, the world is made up of world brushes and entities (as you probably know from experimenting with hammer).
I'm guessing what you call "movers" we call "entities". In one HL mod, NS, it is common to see maps containing 300-400 entities, and another couple of hundred a created while people are actually playing on the map.
You can also set up complex relationships between these entities in that one will set off a chain reaction, so you can easily have a room fall apart and get destroyed during a multiplayer game. You could also set up a large bulkhead sort of door with massive iron bars that unlock and move out of the way before the door itself opens up.
I imagine HL2 would be able to handle FAR more entities than the first, and you can also now set up non-moving entities to follow moving ones in a parent/child relationship. So let your imagination go wild, you could create flying armed vehicles completly out of map geometry (entities/movers etc) and have it flying around in a preset path hunting things down (you might even be able to make it pilotable, but I'm not sure if that'd be possible with only the map making tools.
