Stuck in the jail with the 3 auto gunturrets. Where do you set them up to stop everyone. I have tried everywhere (almost)

Put them in the corners...they cant fall over that way because the walls prop them up. Theres a few other ways using crates to put them up high...whatever pulls your chain tbh.

Drag one of the turrets from where you got to use those first two and drag it the whole way and then you have 4, then set one at in front of each entry or doorway. 
that's how I did it. None of them didn't even get knocked over. Just get to sit there and take care of the manhacks.
