Got acouple of questions...

Is there a way when playing multiplayer in GMOD to select a model for each player? More specifically, the CT and T from CS:S?

Second, is there a No Hud or movie-making blank hud mod for Gmod or better yet CS:S?

Lastly... How do I make NPCs that aren't on the NPC menu that have AI, ex move, shoot.. Like striders, gunships, ect ect

1) Yes, if you're using G-Mod v9, us the SETMODEL command, and then just type in the name of the character, e.g Breen, Barney, Gordon or Alyx.
2) Use the Camera tool to get rid of the HUD (on the Q menu). To get rid of the G-Mod banner, type "dont_buff_my_pylon 1" in the console. Set it to 0 to get it back.
3) It should be the same NPC command as in any other mod; not sure what that is, check the Half-Life 2 wiki or something.
