There is one more obvious difference between the two videos: the Hunter's model. But no one would put that down to 'the G-Man's influence'. Both differences are clearly just a matter of the technology and design behind the game evolving. Similar to how no one genuinely believes that the City 17 trainstation gains a clock between the two ends of HL2 because the G-Man thought it needed one.

i didn't see a difference in the hunters model.
 
Different in that during Ep1 the Hunter was just gray and shot the flechettes out of its eyes...
 
Yeah, in Episode One they had no textures, and just used a "double pulse rifle" attack, as seen in the gameplay videos, instead of the darts.

I really think that may be stretching it, I'd say this was just a minor mistake by the game makers.
 
It's night in the first video, daytime in the second, thus the light comes in from the windows. This can be clearly seen as the hunter gets in, the first video shows its night as the hunter itself can be barely seen in the dark, in the second one its bright outside and the hunter is visible in detail.

Maybe it is a mistake... maybe it isn't.

No doubt Valve will do something to cover themselves :P
