Valve has proven that episodic gaming can be 'done' but still may not be the best method of development. Most people like to buy that box and have a 'full' game. Episodic development may be best reserved for what would typically be an expansion pack.

Ep 2 had an awesome, gut-wrenching ending. Alyx's last words are haunting, a plea most desperate. You can feel things slipping away for her... first her mother, now her father, and she is truly alone in the world.

Think of it this way:
HL1 had an arc. It ended after Xen.
HL2 built upon that, and extended the story arc. It will end after Episode 3.
HL3... or whatever comes next... will do the same, building on what has been established already.
I doubt HL3 will do what HL2 did.. i.e. present us...
