Creating A deathmatch server

Has anyone got a step by step guide to create a dethmatch server with any map i chose for over the internet gaming? cant seem to see a way to create one and always end up using someone elses.

there must be something really silly im missing cuz i can only run one set map from steam tool "source dedicated server" and "dedicated server"

and even if i create when in DM i cant sdee it online anywhere!
