two problems:

one, whenever I load the map in hammer, when I press escape, none of the menu buttons show up, and the skybox doesn't refresh, meaning that when I look at the ground and look at the skybox I don't see the sky box, I only see the ground texture.

2, I made water using the tutorial on the valve developer wiki, but I can't see the water at all. I can see the water in hammer, but not when I load the map. I can hear the water sounds when I load the map, and when I crouch in the water I see the water for a split second, but I can't see it from the top or bottom.

Your map has a "leak" which means that the world is not completely sealed from the "void" in hammer. Any entities that have any sort of path to the "void" (including water) will create problems.
