High def pack for steam. would this work for HL: Source?

No because that high-def pack is for the Half-Life/Quake engine, whereas Half-Life: Source is just that, on Source. The high-def model and textures would have to be ported to Source (which isn't that hard but I'm not going to do it)
 
HL:Source uses a different model format then HL1 models. HL1 models wont work in source but they can be converted to the source format.
 
Yeah you could use some tools (that should be in the SDK(?)) to port old models to "new" ones.
 
I think they used the Blue Shift "high res" models in HL:S
 
do not forget that even if you could, the models are not modified for the ragdoll system
