That sounds like a pretty good idea(using Fraps to record only the demo playback) but I've been experimenting with the 'record demo/render tga's with startmovie/virtualdub to make avi' method.  It DEFINITELY works better than Fraps at CS:S movies.  Fraps just sucks up too much performance to use while playing the game, keep in mind I haven't tried using Fraps to just record a demo playback yet.
I'm a control freak, so having all those video and audio compression options to experiment with by using Virtualdub is an added bonus.
