Why don't they have any proper names?

The names that i've seen are the Crowbar, GG, 357.magnum, and AR-8.

But the other weapons are just: Pistol, SMG, Shotgun, Rocket Launcher, Crossbow and Grenade.

Correct me if i forgot something.

THey don't have real names becasue they're not real guns. They're based pretty closely on real guns, but there are nough differences to make people go crazy if they were actually called by the gun's real names.

There is such a pistol, however it's black and doesn't fire underwater. There is such a SMG, but it uses less ammo, does not have a grenade launcher and has more recoil. There is such a shotgun, but it can't fire two rounds at once. There is such a RPG, but it doesn't have a laser aiming function that controls rockets. There is no such crossbow. There is such a grenade, but it does now have a LED and explodes more.

You can have a USP Match with a stainless slide. Also, the MP7 has very little recoil, like the SMG in the game.

You forgot the pheropods
If you're refering specifically to normal-ish weapons, I think the shotgun is know as a Spas-12 (the weapon Rabarber mentioned), and the grenade I think is called and M-something.

MP7 is actually quite unreliable if knocked or moved around aggresively...

The kind of things the gun is subjected to in the game is probably what would cause it to Jam

Actually you could tell that the SMG was an MP7 because of it's shape.

And i don't think the shotgun is actually the Spaz-12. Spaz has a foldable stock. This one is just a shotgun. I think they made it up but they based it on the real shotguns.

And the Crossbow isn't necesserily the RESISTANCE crossbow. It's JUST a crossbow used by the resistance.

PS:I love how the pheropods make the Combine dance.
