Help with demo recording

I know that there is a feature built in to record gameplay, but not sure what it is. Can someone clear it up for me? It's like "record <name>" but after that I don't know.

Also, is there a way to convert the movies into like mpeg or avi or another viewable format without HL2?

binds/scripts work with hl2, cs:s...all source games, basically.

and no, you can't watch a demo without the game itself.
