I saw the brain on my 2nd playthrough. It's actually what dog rips out when he does the 'killing blow' to the strider....he reaches in there and plucks it out.

All combine units are somewhat alive (like the dropships and gunships, for example).

in the commentary for that section, they mention that this is a new version of the strider using new techniques... potentially the ability to have physics props parented and de-parented?

Anyways the commentary says that this was a success so they are recreating all the hl2 NPCs in this way for future episodes
