Pests are always evolving resistances to pesticides, the only thing new here is that they evolved resistance to a pesticide created by a GM plant.

Incorrect. An adaptation is a result of evolution. Yes, they have adapted to be immune to the toxin, but only after evolving the mechanisms that make this immunity possible. This caterpillar has indeed evolved.

We have fossil records of species in the past, and we have live records of species which evolved from those fossils. But we have no complete idea how it happened.

There's actually quite a lot of evidence for our 'incomplete' theories of speciation. We haven't seen it happen directly but we can see where, how and when it happened.
