Grilled Cheese Appreciation Thread

Made grilled cheese with my girlfriend a few weeks ago, used normal white bread with fresh white american and shredded cheddar cheese. I loves me some grilled cheese sandwichs
 
One of the few foods I'm incredibly picky about is cheese, because I grew up on amazing cheeses. I completely agree.

If that's individual slices of "American Cheese" labeled as cheddar I may have to start thinking less of ol' Ennui.

I seem to have developed my lactose intolerance in adulthood. Didn't have it as a kid.
 
Also toastie makers are indeed the way to go KA, buttering the outsides of the two slices as Darkside described.

Thank you! Also, if you use fatty enough cheese, the oils render through the bread, nicely lubricating the outside of the bread, so you don't even need to use butter! I use Vogel's Original Mixed Grain Bread, a New Zealand icon of sorts. I've had some bread in Canada and America, and I've got to be honest, it was godawful. Hopefully the bread Ennui recommends isn't any of the saccharin, sickly bread I had over there, but there's nothing like biting into well-toasted Vogels.

That's one nice looking toastie :) I like to add a bit of sliced ham, beef or chorizo etc. to my cheese though.

Hmm looks like your toastie-maker would be inadequate for the task of Chocolate Toasties though. When it melts it tends to go everywhere if you aren't using one of the machines which pinches the sides and corners of the bread together.
 
I have to give my 2 cents...i dislike grilled cheese. I also don't like cheese on a steak sub but I do like cheese. It's probably because I was born with an allergy to dairy and by the time I could drink milk I basically already decided on all my favorite foods.

I never drink milk by itself by I do have it with cereal. I used to have it with sobe...:x
 
I don't believe no one's mentioned 'Lea and Perrins' (worchester sauce) yet. It's a must have for an open cheese on toast done under the grill.

I also have a toasted sandwich maker, and it toasts a shell like pattern into the bread, and compresses the edges to protect the melted goodness from escaping. It also compresses diagonally down the centre too, which automatically cuts it in half, so you can tear it in ha--OH GOD I GOT GO MAKE TOASTY SANDVICH NAW.

EDIT: also, extra-mature cheddar only. Americrap is not cheese, but plastic. Swiss cheeses are good too. I have never had brie in a tosted sandwich - someone do this and upload pics. I LOVE BRIE.
 
Alright u bums, I made some stovetop with whitebread and mild chedder. Wasn't as flavorful but it tasted a lot more natural (as it says on the cheese block package). I'm going shoppin tomorrow and will get some wheat bread and some block of cheese that looks good. Maybe something u ****ers recommended. Thanks a shitton.
 
I'm real disappointed with cheddar. I grew up with mild cheddar most of my life. The shit is BLAND. Even sharp cheddar to me is bland. I wish there was a cheap cheese like that I could buy but had some intense cheese flavor, so when used in cheese sauces and stuff it would require less.

Pepperjack cheese is an awesome cheese for use on grilled cheese. It tastes alright when cold, but when melted the flavor is even stronger.
 
Cheddar can be good, but it's kind of potent, and I don't think I could eat two sandwiches of it. Despite what you foreigners think, American cheese is good in that respect.

I tried Muenster a few times. I can't really find a use for it. Same with pepperjack. I have something that claims to be queso cheese (translated as cheese cheese -llol), I don't know much about it other than it tastes great for making quesodillas obviously.

I'd say my favorite is Swiss, followed by Borden's (brand) American. These are the two most useful cheeses in my kitchen.

Please explain how you use these obscure cheeses. What do you make with them?

These are your ingredients: a bar of hersheys chocolate, two square graham crackers, and a marshmallow.

Place 1/4 (or 1/2 if you're fat) of the chocolate on a graham cracker.

Smores suck. They're totally dehydrating, sticky, uneatable garbage. The final step of your process should have been to throw it in the trash and go make a grilled cheese sammitch.

I have tasted chocolate from around the world. I've eaten chocolate from France, Sweden, Spain. I have eaten chocolate from Central America, the land of Mayan Gold. I've eaten the finest chocolates from African cacao that are $30 per little f*cking square. Can you say the same?

Also back to the ACTUAL TOPIC, I made grilled cheese last night. It was delicious. Naturally.
 
I had a big slice of the grilled chees yesterday at company's canteen. Here in the Czech Republic grilled cheese (without bread!) is something like national food, everyone loves that.
